Food safety and environmental protection are key requirements for those who produce food whilst pursuing a comprehensive model of excellence. A model that Brazzale has always promoted in its position as an authoritative and credible spokesperson, also given its very special bond that this ‘dairy dynasty’ can boast with the Asiago Altopiano. The Asiago origins and its close link with the uncontaminated local landscape have had an important role in perpetuating and renewing, from one generation to another, that sense of responsibility for the balance of nature and the harmonious vision of the relationship between humans and the environment that even today, on European horizons, is the driving force behind the company.
The company’s commitment to achieve continuous improvement in the quality of its production processes and its cheeses recently gained a much anticipated and important recognition. On June 14th, the Gran Moravia eco-sustainable supply chain, an extra aged cheese produced in Litovel in the uncontaminated region of Moravia in the Czech Republic, was awarded the prestigious ISO 22005 certification. A certificate which makes this supply chain the first eco-sustainable supply chain in Europe to obtain certification, where the parameters of environmental impact are strictly regulated and monitored by a qualified third party, with a view to safeguarding the environment and occupational health and safety.
The Gran Moravia discipline rigidly sets its optimal parameters, which include the provision of at least 5 acres of land for each head of milking cattle, free range stabling with individual berths for more than 90% of the cattle, a nitrate load per hectare seven times lower than EU limits, a limit ten times more restrictive than the law in relation to the presence of natural aflatoxins in milk, practically absent in the finished product. “With this major step forward,” comments the project manager, Roberto Brazzale, “we want to offer our customers the greatest possible guarantee concerning the extraordinary characteristics of the Gran Moravia supply chain, tracing every stage of production from the field to the final product. The task of achieving all of the above was assigned to DNV, the best-known certification body worldwide. DNV will be awarding the certificate at a ceremony to be held on September 8th in Milan. The following week the Zanè-based company will be the main sponsor of the prestigious event called “CHEESE” in Bra, which sees the start of its collaboration with Slow Food. In October there will be another international event where Gran Moravia is a silver sponsor at Summilk 2011, the world milk congress which will be held in Parma, from October 15 to 19. The main issue will be “sustainable food safety”, with the aim to illustrate how science and technology can contribute to make dairy production environmentally sustainable and socially responsible. An event that will bring together all the leading players in the sector, including Brazzale, to share innovative strategies and present state-of-the-art case histories on the subject of the sustainability of dairy production.
